Gluten Free High Protein Oatmeal and Raisin Cookie Recipe


Sometimes you just want a sweet snack, but rather than reaching for high-sugar, high-fat shop bought cookies, make your own using healthy ingredients instead.

This cookie recipe is high in quality protein, contains good fats (coconut oil which has many health benefits), and tastes absolutely delicious too. They are also very quick and simple to make.

You don’t need an electric mixer if you don’t have one. You can use a bowl and spoon instead.

Dry ingredients:

Wet ingredients:

  • 1/4 cup coconut oil or butter (melted in microwave if necessary)
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract

Other ingredients

  • 1/4 cup dessicated coconut
  • 1/2 cup raisins/sultanas/choc chips/cherries/blueberries


Pre-heat oven to 350 degrees F. Combine the dry ingredients, then add in the wet ingredients, mixing them well.

You may want to melt the coconut oil/butter and sugar in the microwave for 30 seconds if the coconut oil has solidified.

Add the remaining ingredients near the end, then mix slowly until distributed evenly.

20150129_153038Spray a baking sheet with oil to prevent the cookies from sticking, then drop tablespoon sized amounts onto the baking sheet.

Bake for 10 to 20 minutes, or until golden brown.

They are delicious warm, and once cookied you can reheat them for a few seconds in the microwave to enjoy these protein cookies at their best!

Each cookie contains approximately 90 calories, 5g of fat (from the healthy coconut oil), and 5g of protein.
